Salmon Patties

IMG_0848I’m not a fish lover and neither is Jack, but we both know that it’s good for us and we’re trying to incorporate it into our meals at least once a week. Tonight we’re having salmon patties (about $6 for 7 patties if you buy salmon in the can) with macaroni and cheese (Kraft – one of Jack’s favorites) and fresh sugar snap peas from our garden sauteed in a little butter and garlic. Yum!

Salmon Patties

15 ounces salmon (3 small cans or packages)

1/2 cup finely diced celery

1/3 cup finely diced onion

2 teaspoons lemon juice

1/4 teaspoon poultry seasoning

1 cup Panko or bread crumbs (1/4 cup to mix into patties & 3/4 cup for coating patties)

3 eggs, slightly beaten

oil for frying patties

Mix salmon, celery, onion, lemon juice, poultry seasoning, and 1/4 cup Panko together. Add 3 eggs, slightly beaten, and mix well.

Heat oil in frying pan. Scoop 1/3 cup of salmon mixture and coat with crumbs. Place in frying pan. Repeat with remaining salmon mixture. Cook on medium heat until golden brown. Gently turn and cook other side until browned.

You can season with salt and pepper before serving or place seasonings on table to allow each person to season their own.
