Low Carb Banana Bread

IMG_0353 (2)Once again I found myself with bananas that were beyond eating and needed to be used up. I love banana bread, but it has a lot of carbs which I’m trying to avoid. I decided to modify my regular banana bread recipe and it turned out really, really well! The resulting bread is a little denser than normal banana bread, but the flavor is very good and it’s more filling. Also, by using half the Stevia as the sugar that was called for and using oatmeal and flax meal for the majority of the flour, I cut the carbs by almost half. If you use two loaf pans to bake this and cut each pan into 10 pieces, each slice should have about 17 grams carbs, as opposed to the original recipe which would have given you 32 grams carbs per slice.

Low Carb Banana Bread

1/2 cup butter – softened

5 bananas – very ripe

4 eggs

2/3 cup Stevia

1 1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon baking soda

1 1/2 teaspoon cinnamon

2/3 cup flax meal

1 cup oatmeal

1 1/3 cup flour

1 cup chopped nuts

Cream butter with bananas. Add egg, stevia, salt, baking powder, baking soda, and cinnamon and blend. Mix in flax meal, oatmeal, and flour. Blend just until well mixed. Add chopped nuts and mix well.

Pour into two greased loaf pans. Bake at 350° for about 50 minutes. Bread is done when a toothpick inserted into center comes out clean.

Remove from oven and cool in pans for 10 minutes. Carefully remove from pans and cool on a cooling rack. Wrap in plastic wrap.

    • I love banana bread, too! The problem that I’m finding with practically all of the foods I really enjoy is that they are all filled with carbs. This recipe is a little different than what I used to make, but it’s also practically guilt free! Half the carbs of regular banana bread and more fiber, so it’s a win-win.
