It’s been kind of a lazy day today. It’s too windy to go outside and I have most of what needs to be done inside taken care of. Well, what isn’t done can just wait until tomorrow! A nap sounds good, but then I normally don’t really sleep much in the middle of the afternoon. I know there’s just a little bit of ice cream left in the freezer, so……..
I almost always have extra bananas around the house that need to be used up. I make banana cakes, banana cookies, banana bread, banana cream pie, bananas with strawberries, and today I’m making glazed bananas to go over ice cream. Glazed bananas are really tasty and it only takes about 10-15 minutes. I’ll give you the recipe and directions for one banana (which is great for one persona) and you can double, triple, or multiply it by however many bananas you want to use.
Using a small non-stick pan, melt 2 Tablespoons butter. Stir in 1/4 cup brown sugar. Add 1/2 teaspoon vanilla, a dash of cinnamon, and 1 Tablespoon water. Mix all together and cook over medium heat until sugar is dissolved. Make sure it doesn’t burn. Remove from heat and slice bananas into caramel mixture. Stir to coat. Serve in a sauce dish, over angel food or yellow/white cake, or over ice cream. Enjoy!
