Last night I made chicken cutlets for dinner and needed a good, easy side dish to go with them. Jack and I don’t eat potatoes too often, but Jack does love pasta, so that sounded good. I also had some broccoli in the fridge that I wanted to use. So, pasta and broccoli….
A long time ago I was shopping in the Asian section of the grocery store and happened upon some noodles that come already cooked and each bag has two separate bags inside of it. They’re inexpensive and are soooo convenient to have in my pantry. I decided to use the broccoli and pasta together with a little garlic and soy sauce as my side dish.
Cut the broccoli into bite-sized pieces (I had about five cups when it was cut). Steam it for a4 tablespoons) in a large skillet. Add about 1 tablespoon minced garlic. You can use fresh, but I always have a jar of it in the fridge because it’s so handy to have on hand. Stir the garlic into the oil. Add both bags of noodles, loosening them so they are separated as you go. Stir to mix everything and to coat the pasta evenly. Heat for a couple of minutes, stirring occasionally.
