Rice Crispy cookies…I don’t know about you, but most of the people I know in my generation were raised with them. They’ve always been a hit with kids and adults and I’m sure they’ll continue to be for generations.
I make crispy cookies for Jack, and he likes them, but I’ve found that it’s nice to add some extra ingredients for a good variation. Depending on what you add, they can end up almost like granola bars. Today we’re going to do a simple version.
Not Your Mom's Crispy Cookies
1/2 cup butter
16 oz. (10 cups) marshmallows
8 cups Rice Crispie cereal
1 cup chopped nuts
1 cup dried cranberries
1 cup mini chocolate chips
In large pan over medium heat, melt the butter. Add marshmallows and stir until melted. Add Rice Crispie cereal and stir to mix well. Pour nuts and cranberries in to mixture and stir to combine. Pour into prepared (buttered & wax paper lined) 13 x 9 pan. Press down slightly with butter wrapper, then sprinkle chocolate chips on top and press firmly.
When cool, lift waxed paper and cookies from pan and cut into squares.
