Easy Fruit Cobbler

I was getting ready to cook dinner tonight when I got a message that tomorrow will be a “food day” at work.  I’ve worked at several different hospitals and one thing I have to say is that they all have excellent food days!  Everyone brings something and we all share.  And…any reason is a good reason to do it.

pie filling and pineapple in.  Stir together.  Mix it well so the pineapple juice is blended with the pie filling.  Sprinkle the dry cake mix on top and spread it so it’s well distributed.

I tried to think of something to make with what I had on hand and decided on a recipe that I’ve had for many years.  I can’t remember where I got the recipe, but I’ve heard that Weight Watcher’s has something like it.  It’s a fruit cobbler.  I had everything I needed, it’s quick and easy to make, and everyone seems to like it, so I decided to go with that.

You need one can of crushed pineapple and one can of pie filling (any flavor you want, I use blueberry).  Grease a 13 x 9 pan pan and dump the pie filling and pineapple in.  Stir together.  Mix it well so the pineapple juice is blended with the pie filling.  Sprinkle the dry cake mix on top and spread it so it’s well distributed.

Melt one stick butter (1/2 cup) and drizzle over top.  Use a knife to poke some holes into the mixture.  Chop 1/2 cup walnuts and sprinkle them on top.  One of  my coworkers is allergic to nuts, so I only put them on 3/4 of the cobbler and marked it with toothpicks so I know which part is nut free.

Bake at 350 degrees for 45 minutes.  Cool and cut into squares.  You can serve with whipped cream of you would like, but I like it just the way it is.  Enjoy!
